Why wouldn't he be polite? We're atheists, but that doesn't mean that we lack a moral code, especially Sam Harris who has spent more time appreciating ethics than any of us.
You can attack an opponent's stance without attacking your opponent. In fact, in a public debate, your message will often get derailed by a personal attack, and the rest of your points get dismissed.
