Great responses from both cynicistoptimistrealist and gordon about handling the situation. The best thing to do would play it by situation and say one or two of the following responses:

"I'm a lapsed- Christian" "I'm thinking of converting" "I'm sorry, but I keep my religion to myself" "I'm open to anything, inshallah"

The point is that once you identify yourself as "outside the norm', your chances for persecution and harrasment go up. Some people may understand your beliefs and others will not. If they persist, then the best reasonable approach would be to say "I'm sorry, but where I come from asking someone about their religion is like asking about their sexual nature or their monetary issues-It's considered very rude!"

Keep in mind that they man harass you, the best thing you can do is walk away and try to locate yourself in a local area with little political/religious proclaiming or broadcast(s), and stay away from "risky behaviour". On the other hand, to call yourself "a person of the book" (Jew/Christian/Muslim) wouldn't be a problem. Simply visiting a mosque even (remove your shoes) would let them know you're friendly and open. But don't mention atheism or agnosticism! Keeping mum or incoherent would be the better solution.
